BECHAMEL CROQUE MONSIEUR


Serves 2:

4 slices of sandwich bread
40g margarine
40g of flour
200g of vegetable milk
1 pinch of nutmeg
salt and pepper to taste
1 zucchini
1 large onion
1 block of smoked tofu
1 teaspoon brown sugar
1 teaspoon of cider vinegar
Malted yeast

Preheat your oven to 180 degrees.

In a saucepan, melt the margarine and add the flour. Mix well. Then add the vegetable milk little by little while whisking. Continue whisking for a few minutes until the béchamel thickens.

Chop the onion and fry it for a few minutes in a hot, lightly oiled pan. Add the brown sugar and cook for a few minutes until the onions caramelize. Deglaze with the cider vinegar.

Cut the zucchini into thin strips and fry them until they are slightly tender.

Cut the tofu block into slices.

Spread a layer of béchamel sauce on a slice of bread, add caramelized onions, zucchini slices and smoked tofu. Spread a layer of béchamel sauce on the second slice of bread and close the croque-monsieur. Add béchamel sauce to the top of the croque-monsieur and sprinkle a little malted yeast on top.

Place in the oven for about 10 minutes.
